FINALLY FRIDAY

This has been the longest week EVER!!

passportThis morning I woke up at the crack o’dawn to get a passport for my birthday trip.  It’s not until August but I’m doing this WAY ahead of time so I don’t have to stress about getting my passport in time.

The whole thing took maybe an hour from waiting time until finish.  I’m glad I got it over with!  Now if I want to take a spontaneous trip to Europe, I can in 4-6 weeks!

I came home to a few trays of dehydrated pears that I sliced up yesterday before they went bad.  I couldn’t stop eating these.  They are like crack!  I can’t even guess how many pears I ate…4?

After breakfast, I hit up the gym for a little walking HIIT.

I’m shocked at how many calories can be burned with the addition of a little incline.  The slow rate also allows me to read the Kindle which makes 45 minutes fly by!

When I got home, I had some protein “ice cream” for my post-workout treat.  I bought a packet of this protein powder to try.

Today was supposed to be a cleaning day, but after getting my passport and going to the gym I felt so accomplished that I took a nap instead.  My body needed it.  I’m completely exhausted from all the fun I’ve been having this week! Winking smile

For LUNCH, I heated up the last two Veggie patties that I made the other day.  I was still so full from my workout ice-cream but I knew I couldn’t just survive on dehydrated pears.

I met up with Boyfriend for DINNER last night at Rock Bottom in downtown SD.  It used to be one of my favorite joints but then they butchered the menu.  I go there thought because I know the bartenders and they take care of me!

I order the 2:00 A.M. BURGER (from the menu: Crispy hash browns, American cheese and chopped bacon, topped with a fried egg) and with was REDICULOUS!!  I actually ate the WHOLE darn thing and it was AMAZING!

I have a burger baby my belly now.  So worth the calories and time I’m going to have to kill myself at the gym tomorrow to pay for it!

THIRSTY THURSDAY

Today was busy!?  I survived all day on Luna bars and copious amounts of coffee.  By the end of the day, I felt like I had deserved to let loose a bit.

Mark was sad because he had to do a shot of Jager because he lost a bet.  Ick…HATE Jager!

LOVE Rosie’s because it’s a local “dive” bar with no pretentions and a rather extensive selection of bottled beers.  Alas, they were all out of the Oatmeal Stout that I wanted to try Sad smile

Mark and I played a few rounds of electronic darts (forgot to take a picture).  I love darts and I’m usually pretty good though I deny having any skills.  I just throw the darn things and pray I hit something.

After our dart games, we wandered across the street to The Ould Sod, which is the local Irish Bar.  Little did we know when we walked in that it was karaoke night!!!

Now I’m am NOT a karaoke girl, however after a few pints of Guinness and shots of Jameson whiskey and apparently I BECOME a karaoke star!

From what I’m told, Mark and I sang the Beatle’s Hey Jude.  From what I can remember it was AWFUL!!!

On our drunken crawl back to my house, we stopped by the grocery store to pick up some eats.  I don’t know why or how but apparently I made an AMAZING Taco Dip for some drunk munchies.  Who makes taco dip drunk???

THAT’S A CROCK

My life lately has been either FEAST or FAMINE.  Both with food and time.  Work has been easy lately with not much to do therefore I’ve had plenty of time to cook and spend with Boyfriend.

Because of all of my extra time, I decided to make a juice for BREAKFAST and use a chunk of my extra time to clean the sucker!  It’s actually not too bad to clean.  I just rinse the parts that come off under hot water.  The b%#*h of cleaning it lies in the screen that separates the pulp from juice.  Small price to pay for the amazingness of fresh juice!

I by spinach by the truckload.  I noticed that one of my bags of spin was close to death so I used my bonus time to make some homemade veggie patties for LUNCH.

To give the patties a little bit more pizzazz I topped them with some home tzatziki  sauce.  The sauce was AMAZING!!!  I’m never buying the pre-made stuff again!

TZATZIKI SAUCE: FAGE FF GREEK YOGURT + CUCUMBER + LEMON JUICE + DILL + GARLIC

I also used my free time to try another new recipe.  Did you know that you can make amazingly fabulous and easy lasagna in a crock pot?!?!  For DINNER I made Boyfriend and I a crock pot lasagna with turkey meat sauce.  I was going to add some spinach and mushrooms, but only remembered this just as I was finishing the last layer.

This is so easy to make!  I just sautéed up some extra lean turkey with some red wine and garlic.  I then added a canned of tomato sauce and crushed tomatoes to the mix.

Once I had my sauce, I used the sauce as the bottom layer for the crock.  Next, I layered uncooked lasagna noodles, part skim-ricotta cheese, and part skim-mozzarella repeating the layers until the sauce ran out.

I let the crock pot “crock” on high for 4 hours.  After I turned the crock off I put one more layer of mozzarella cheese on top, put the lid back on, and let it sit for 15 minutes.  Just before serving I sprinkled some fresh basil from my window plant for the perfect finishing touch!

The noodles turned out a bit more cooked then I would have preferred, but other than that the meal was DELISH!  Boyfriend gave it 6 stars (out of 5), and devoured the leftovers the next 2 days.

We weren’t really in the mood to have a crazy-go-out night so we rented a movie, got some B&J’s, popped a bottle of wine, and consumed all in our big comfy bed.  Perfect date night in my book!

TAKE ME OUT TO THE BALL GAME…

Today was SOOOOO much fun!!! 

Taco Tuesday and a Padres game with my two favorite boys!!!

Mark called me this morning and wanted me to tag along with him to a Padres game.  I asked Boyfriend to come along expecting him to say “no” but to my surprise he wanted to go.  I think he feels like a 3rd wheel sometimes when Mark and I hang out. 

Mark is my SGBF (straight/gay best friend).

For our Taco Tuesday celebration I dragged the boys down to La Puerta.

We “pre-gamed” with some $2 Tecate beers.

We ordered an app because they were 1/2 off for HH!

I used tonight as an opportunity to try my first TJ Dawg.”  I’ve seen TJ Dogs on a few menus around town, but I’ve never been in the mood to try one.  La Puerta’s menu described the TJ Dawg as: Bacon Wrapped Turkey Hot Dogs-Diced Tomatoes-Grilled Onions-Jalapeños-Ketchup-Mayo.

Verdict: Pretty darn good!  I love that this is a turkey dog.  All of the other places I’ve seen this used pork dogs.  Trying to be a bit good when eating something wrapped in bacon!

I also order 2 “street tacos” to accompany my dawg.  Street Tacos are basically just mini-tacos.

Boyfriend and Mark knew a few people who worked at Bub’s so we ended up getting quite a few complementary shots sent over to our table.  I was feeling pretty good!

Afterwards we headed to the game.  We didn’t buy tickets this time but instead bought “park passes” that allow you to sit on the lawn outside the ball park but within the gates.  They are actually pretty good seats!!

STEAK & PIRATES

I finally found some new towels for the kitchen for the season of summer!  This is a weird time of year because there aren’t any holiday towels to decorate with.  The 4th of July is in a few months so I’ll have to be on the look out for some patriotic towels.

My day kind of ran away from me today so the camera was not busted out until dinner.  I made a simple, yet DELISH dinner for Boyfriend and I tonight.

Boyfriend picked up a tasty bottle of red wine for dinner…

I picked up the steak and marinated it.  Boyfriend threw it on the grill.

I rarely eat steak.  The last steak I had was in August.  But tonight I was really craving some red meat and I have to say that it was pretty darn good.

Pirates of the CaribbeanBoyfriend loves pirates so I thought I’d indulge him because he always indulges me.

The movie was like every other Pirates of the Caribbean movie.  It wasn’t terrible, just typical and LONG!!  If you liked the other movies, then you will like this one.  It’s nothing special though.
